First, cut the banana into small slices. Then, peel the skin off each slice. Drizzle a little olive oil on the slices.
Place the slices in the oven for 10 to 15 minutes. They don't need to be fully cooked.
Coat a lemon squeezer with olive oil and place a banana slice inside to form a basket or casserole shape. Repeat with each slice.
Place the baskets in a cupcake mold to keep their shape, then bake them again for 20 to 25 minutes.
Once they are out of the oven, heat the beans in a frying pan for a few minutes while you assemble your casseroles.
Add a portion of beans to the bottom of each casserole, followed by rice and your favorite protein, such as chicken, fajita meat, or pork rinds.
To make these casseroles vegetarian, add your favorite vegetables and plant-based proteins as fillings.
