    • 1 Can or doy pack of Mama Lycha refried beans 
    • 1 Ripe plantain 
    • ½ Cup of sugar


    1. Boil the plantain in a pot until soft, then use a fork to mash it into a dough.
    2. Use that dough to form a "tortilla" and add the refried beans in the center of each. Close the tortilla and give it the half-moon shape typical of empanadas.
    3. Fry the empanadas in oil until golden brown on both sides.
    4. In a plate add the sugar, making sure that the plate is completely covered by it.
    5. Remove the empanadas from the pan and dip them in the sugar on both sides.

 To speed up the cooking process of the plantain, by microwaving it for 3 minutes or placing it in a pan covered with aluminum foil.
