Mama Lycha Cuban Chorizo (sausage).
Mama Lycha corn flour.
Mama Lycha Quesillo (Melting cheese).
Water.
Salt to taste.
Sauce to taste (optional).
In a bowl, combine Mama Lycha corn flour, water, and a pinch of salt. Knead the mixture until it is smooth and easy to work with. Form the dough into small balls, then flatten them in a tortilla press or with your hands.
Place the tortillas on a hot griddle and cook them on both sides until lightly browned and still flexible.
Then, cook the Mama Lycha Cuban chorizo in a skillet until well browned. Keep warm.
To assemble the quesadillas, place a portion of Mama Lycha quesillo (melting cheese) on a hot tortilla, then add the cooked chorizo on top. Fold the tortilla to close the quesadilla and let the cheese melt.
Serve with salsa and sour cream, if desired. Enjoy them hot and freshly made.
For a more intense flavor, lightly brown the quesadillas with butter before serving.
