Mama Lycha Sweet Ripe Plantains
White bread
1 stick of butter
2 eggs
Sugar
Ground Cinnamon
Cook the plantains with a stick of butter for a few minutes, until the butter melts and the plantains turn golden brown.
Mash the plantains into a uniform paste.
Cut the edges off the bread slices, flatten them, and fill them with the plantain mixture.
Roll up each slice and dip it in a bowl of two beaten eggs.
Cook each roll in a frying pan for less than five minutes.
Mix three parts sugar with one part cinnamon, and coat each roll with the mixture on all sides.
Garnish with a cinnamon stick and serve.
Make sure the rolls are not overly saturated with egg, and do not leave them in the pan for too long. Otherwise, the egg will cook and leave an unpleasant flavor.
