Empanada dough
Chimichurri

Cut the chorizo into cubes and cook them in a frying pan for a few minutes.
Fill the empanada dough discs with the chorizo and grated cheese.
Close the discs to form empanadas and seal them with a fork.
Brush each one with beaten egg.
Bake at 350 degrees for 15 to 20 minutes.
Serve with chimichurri sauce.
The smaller the chorizo cubes, the easier they will be to handle as empanada filling.
