    • 2 cups of grated Mama Lycha Quesillo (Melting cheese)

    • 1 pre-cooked potato, diced

    • 2 eggs

    • 1/2 cup cornstarch

    • Salt and pepper to taste

    • Oil for frying

    • Green sauce for serving

    1. To start, prepare the dough by mixing two cups of grated Quesillo Mama Lycha (melting cheese) with pre-cooked, diced potato in a bowl. 

    2. Then add two eggs, half a cup of cornflour, and salt and pepper to taste.

    3. Mix everything together until you have a uniform dough.

    4. Shape the dough into small balls, making them as big or as small as you like.

    5. Heat oil in a frying pan and fry the croquettes until they are golden brown on the outside.

    6. Place them on kitchen roll to absorb any excess oil.

    7. Serve the croquettes hot with green sauce.

The potatoes should be partially cooked to make them easier to handle.
