Begin by preparing the Mamá Lycha Relajo for the stew marinade. Put it in a heated pan and toast for a few minutes.
Add the relajo to a blender with achiote, beef broth, chicken bouillon powder, and a sachet of tomato sauce. Blend for a few minutes until all the ingredients are well combined.
In a pressure cooker, combine the diced pork, the blended sauce, potatoes, carrots and celery. Cook for 45–50 minutes.
To serve, place a few pieces of meat alongside potatoes and vegetables and serve Mama Lycha's Tropical Mix on the side.
If using a traditional pot, let the stew cook for an hour and a half to two hours.
