Chicharrón (pork rinds)
6 whole Roma tomatoes peeled
4 cups chicken broth
1 tablespoon tomato flavored chicken broth
1 guajillo pepper
Salt and pepper
Add oil, garlic, tomatoes, tomato purée, tomato powder and chicken stock to a pot. Stir well to combine everything.
Now add the pork rinds and chilli, and cook for 5 minutes. Then blend the whole mixture.
Cook for a further 5–7 minutes before serving.
Garnish the soup with more pork rinds, crema guatemalteca and parsley.
The soup should have a thick texture.
