    • Mama Lycha Tomato Sauce

    • Chicharrón (pork rinds)

    • 6 whole Roma tomatoes peeled 

    • 4 cups chicken broth 

    • 1 tablespoon tomato flavored chicken broth 

    • 1 guajillo pepper 

    • Salt and pepper

    1. Add oil, garlic, tomatoes, tomato purée, tomato powder and chicken stock to a pot. Stir well to combine everything.

    2. Now add the pork rinds and chilli, and cook for 5 minutes. Then blend the whole mixture.

    3. Cook for a further 5–7 minutes before serving.

    4. Garnish the soup with more pork rinds, crema guatemalteca and parsley.

 The soup should have a thick texture.
