Dried fish wrapped in egg

1 Mama Lycha dried fish corvina
1 Mama Lycha sofrito criollo
1 Mama Lycha fish/shrimp broth
1 package of Jasmine Rice Mama Lycha
2 medium potatoes
Cut the fish into medium pieces and soak it in hot water to remove the salt. Repeat this process a couple more times to remove as much excess salt as possible.
Separately, beat the eggs and dip the fish pieces in the mixture.
In a frying pan, fry the fish with oil over medium heat on both sides without letting it burn.
Use a pot to mix the sofrito Mama Lycha with water and bring it to a boil. Then add the fish and let it boil for 30 minutes more.
In another pot of boiling water, cook the potatoes without skin until they are soft. Then fry them in olive oil with the grated onion.
To serve, accompany the preparation with Mama Lycha's jasmine rice.
if you see that the sofrito mixture with the fish in the pot is drying out, the best thing to do is to add water to give it a sauce-like texture.
