RED BEAN SOUP

Ingredients

2 cups of Mama Lycha Red Beans or Pipil Red Beans
1 lb. of pork neck bone
1 chaiote squash
1 Mexican squash
1 corn husk
1/2 cup of corn flour or Maseca
4 cloves of fresh garlic
1/2 onion
Maggi chicken bouillon
Salt

Directions

1 ) Fill a medium-sized pot with water and place on medium heat.
2 ) Once water reaches boiling point, add rinsed beans.
3 ) Add 4 cloves of garlic and ½ an onion to water.
4 ) Once the beans are semi-tender, add the pork neck bone to boil
5 ) Mix 1/2 cup of corn flour with water and add chicken bouillon to give flavoring. Make small balls out of mixture.
6 ) Once the beans and pork are tender, add slices of chaiote squash, Mexican squash, corn bits, and flour balls.
7 ) Add salt to your liking.
